Pumpkin Marshmallow Pie from Baked Pumpkin
MUH MUH MY! MUH MUH MY! Look at that pie! Mr. E and I are competing with great pie recipes. You saw the previous posts on how to bake the raw pumpkin and prepare it for future use. You will need to thaw it for use. Once it's thawed fill a plastic 4x6 inch rectangular container with the thawed pumpkin. That is the amount you will need to make 2 deep dish 9 inch pies. Here's the recipe, based on a Trader Joe recipe.
2 deep dish 9 inch pie crusts.
2 cups thawed pumpkin (fills a 4x6 inch rectangular plastic container).
2 large eggs.
3/4 to 1 cup brown sugar.
1 teaspoon pumpkin pie spice OR
1 teaspoon each cinnamon, nutmeg, ginger and allspice.
1 12 oz can evaporated (condensed) milk.
Marshmallow cream or marshmallows (to add after baking)
In a saucepan, heat the thawed mashed pumpkin to boil excess moisture out. Make sure moisture is nearly boiled out.
In a bowl, mix the ingredients, adding the condensed milk last. Do not add marshmallows or marshmallow cream yet. While mixing ingredients, heat the oven to 425 degrees F.
Pour the ingredients into the 2 pie crusts, except the marshmallows or marshmallow cream. Place the pies into the middle rack of the oven. Bake for 15 minutes at 425 degrees fahrenheit, then reduce the temperature down to 400. Keep it at 400 degrees for the next 30 minutes. Afterwards, check the firmness of the filling, then reduce the heat to 375 degrees and continue about 10 minutes, then check the center for firmness again with a fork or toothpick. The total baking time will be around 1 hour, give or take 10 minutes. When a knife, fork or toothpick comes out clean when inserted, turn off the oven, then, if using marshmallow, put between 15 to 20 marshmallows on top of the pies, or spread some marshmallow cream over the pie filling. With the oven off, put the pies back in while the oven is warm, and check around 5 minutes to see if marshmallows or cream has melted. The residual heat in the oven will melt the marshmallows, helping them spread over the center. Once they are melted, remove the pies, and put them on cooling racks.

Update: To make a Pumpkin Smore Pie, use graham cracker crusts in place of a regular crust, melt some chocolate bars or half bag of chocolate chips for each pie, then put on marshmallows or marshmallow cream over the chocolate. As the pies cool, they will melt and make a pie to devour.
