I have friends who suffer from celiac disease. A recipe like this is a taste of pleasure to them. They can't eat wheat and certain other grains that contain gluten. This is one of the grains they can eat.
Update: You will now see an additional link to substitute some ingredients if you don't have some in your immediate pantry. One common substitute is margarine for shortening.
