Pumpkin Pie from scratch baked Pumpkin Filling





Okay, I'm going to one up Rattrapper with a few tweeks!

First, heat up 2 cups of thawed pumpkin in a saucepan, boiling out the excess moisture. Now, try this!

Cooking spray (for pie crusts)
2 graham cracker 9 inch pie crusts.
2 large eggs.
3/4 cup molasses.
1/2 teaspoon potassium salt aka salt substitute, such as No Salt.
1 teaspoon pumpkin pie spice OR
1 teaspoon each cinnamon, nutmeg, ginger and allspice.
12 oz can evaporated (condensed) milk.

Marshmallows or marshmallow cream (for pumpkin marshmallow pie).

Combine all ingredients except marshmallows or marshmallow cream, adding evaporated milk last.

Spray the pumpkin crust with cooking spray. Let spray soak into crusts, then pour ingredients into pie crusts.

Bake pies in middle of oven at 425 degrees Fahrenheit. At 15 minutes, reduce heat to 400. Continue for another 40 minutes, then check the center of pies. Knife or fork should come out clean. If not, keep baking until it comes out clean. For pumpkin marshmallow pies, when the knife or fork comes out clean, turn off oven and place 15 to 20 marshmallows on pies, and let it sit in turned off oven for about 5 minutes. Check and keep monitoring pies until marshmallows or cream carmelize on top. Remove pies, and place on cooling racks.

Pumpkin Marshmallow Pie from Baked Pumpkin



MUH MUH MY! MUH MUH MY! Look at that pie! Mr. E and I are competing with great pie recipes. You saw the previous posts on how to bake the raw pumpkin and prepare it for future use. You will need to thaw it for use. Once it's thawed fill a plastic 4x6 inch rectangular container with the thawed pumpkin. That is the amount you will need to make 2 deep dish 9 inch pies. Here's the recipe, based on a Trader Joe recipe.

2 deep dish 9 inch pie crusts.
2 cups thawed pumpkin (fills a 4x6 inch rectangular plastic container).
2 large eggs.
3/4 to 1 cup brown sugar.
1 teaspoon pumpkin pie spice OR
1 teaspoon each cinnamon, nutmeg, ginger and allspice.
1 12 oz can evaporated (condensed) milk.

Marshmallow cream or marshmallows (to add after baking)

In a saucepan, heat the thawed mashed pumpkin to boil excess moisture out. Make sure moisture is nearly boiled out.

In a bowl, mix the ingredients, adding the condensed milk last. Do not add marshmallows or marshmallow cream yet. While mixing ingredients, heat the oven to 425 degrees F.

Pour the ingredients into the 2 pie crusts, except the marshmallows or marshmallow cream. Place the pies into the middle rack of the oven. Bake for 15 minutes at 425 degrees fahrenheit, then reduce the temperature down to 400. Keep it at 400 degrees for the next 30 minutes. Afterwards, check the firmness of the filling, then reduce the heat to 375 degrees and continue about 10 minutes, then check the center for firmness again with a fork or toothpick. The total baking time will be around 1 hour, give or take 10 minutes. When a knife, fork or toothpick comes out clean when inserted, turn off the oven, then, if using marshmallow, put between 15 to 20 marshmallows on top of the pies, or spread some marshmallow cream over the pie filling. With the oven off, put the pies back in while the oven is warm, and check around 5 minutes to see if marshmallows or cream has melted. The residual heat in the oven will melt the marshmallows, helping them spread over the center. Once they are melted, remove the pies, and put them on cooling racks.

Update: To make a Pumpkin Smore Pie, use graham cracker crusts in place of a regular crust, melt some chocolate bars or half bag of chocolate chips for each pie, then put on marshmallows or marshmallow cream over the chocolate. As the pies cool, they will melt and make a pie to devour.

How To Make Pumpkin Filling From Leftover Whole Pumpkins



The pumpkins from Halloween are uncarved and at your disposal. You decided to take on the task of making some pumpkin filling for the Thanksgiving pumpkin pie, but you just can't figure out how to prepare that big orange globe sitting in your kitchen. Here is how you do it:

First, you will need some tins to accommodate that pumpkin when you put it in the oven. A cookie sheet with raised edges is a must. Use cooking spray on it to keep the pumpkin from sticking on it.

Cut the pumpkin in half, and take out the guts (seeds and center). Place the halves onto the sheet.

Heat the oven to 350 degrees, and bake the pumpkin somewhere around 30 to 45 minutes, and check on the softness. Keep baking as needed until it gets soft. It usually takes around 50 minutes to completely bake the pumpkin pulp.

In a large sturdy mixing bowl, scoop out the contents, and mash the pumpkin pulp with a potato masher or a mixer. Save the contents in a container for future use. Contents may be frozen for the future.

Tip: you can save the seeds for roasting or for planting pumpkin vines the following Spring to grow your own Pumpkins.

I saw this recipe, and it made my mouth water! This is a similar picture to what I saw, and the perfect crust for it is a ready made graham cracker crust. I look forward to having at it.

Update November 26 2015: I made it with a 9 inch deep dish pie crust. I made the pie without the marshmallows, then put the marshmallows on it while it started to cool, just out of the oven. It'll use about 15 to 20 marshmallows.
